Perfect Brownie Recipe

Ingredients

  • 1 cup unsalted butter, melted and slightly cooled
  • 1 cup granulated white sugar
  • 1 cup packed dark brown sugar
  • 4 large eggs, at room temperature
  • 1 tablespoon pure vanilla extract
  • 1 cup all-purpose flour
  • 1 cup Dutch-processed or unsweetened cocoa powder
  • 1 teaspoon espresso powder (optional)
  • 1 teaspoon kosher salt
  • 1 ¼ cups semi-sweet chocolate chunks or chips, divided

Equipment

  • 9 x 13 inch baking pan
  • Parchment paper
  • Nonstick cooking spray

Instructions

  • Preheat the Oven: Preheat your oven to 350°F (175°C). Spray a 9×13 inch baking pan with nonstick cooking spray. Line the pan with parchment paper, leaving an overhang on the sides, and spray again. This will make it easy to lift the brownies out of the pan after baking.
  • Mix Wet Ingredients: In a large mixing bowl, whisk together the melted butter, granulated sugar, and brown sugar until the sugar is dissolved. Add the eggs and vanilla extract, whisking until smooth and combined.
  • Combine Dry Ingredients: Sift in the flour and cocoa powder. Add the salt and espresso powder (if using), and stir until just combined. Be careful not to overmix.
  • Add Chocolate: Fold in 1 cup of the chocolate chunks or chips. Spread the batter evenly into the prepared pan and sprinkle the remaining ¼ cup of chocolate chunks on top.
  • Bake: Bake for 25-30 minutes on the middle rack of the oven until the brownies are just set to touch. A toothpick inserted into the center should come out with a few moist crumbs attached. Do not overbake; the brownies will continue to set as they cool.
  • Cool and Serve: Remove from the oven and let the brownies cool completely in the pan. Once cooled, use the parchment paper overhang to lift the brownies out of the pan. Cut into squares and serve.
